Roasted Chicken

Ingredients
  • 1 whole chicken 3 pounds
  • 1 cup carrots cut in large pieces
  • 1 cup celery cut in large pieces
  • 2 cloves garlic
  • 1 onion medium
  • 1 lemon sliced
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 1 cup chicken stock
  • 1 tsp sea salt
  • 1 tsp papaya pepper
  • 2 tbsp olive oil

  • 1 whole chicken 3 pounds
  • 1 cup carrots cut in large pieces
  • 1 cup celery cut in large pieces
  • 2 cloves garlic
  • 1 onion medium
  • 1 lemon sliced
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • 1 cup chicken stock
  • 1 tsp sea salt
  • 1 tsp papaya pepper
  • 2 tbsp olive oil
Instructions
  1. Preheat oven at 400 degrees.
  2. Pat chicken dry and place in baking dish or roasting pan.
  3. Stuff chicken with carrot and celery pieces, onion, garlic, lemon slices, Rosemary and thyme sprigs.
  4. Put any left-over ingredients in the baking dish around the chicken.
  5. Coat the chicken with the olive oil then add salt and papaya pepper.
  6. Cover chicken with foil and bake for 30 minutes.
  7. After 30 minutes, remove the foil and bake for another 30 minutes or until the internal temperature reads 165 degrees.
