Hippocrates Soup
Servings
Ingredients
  • 1 medium celeriac or 4 stalks of celery
  • 1 medium parsley root or parsley
  • 2 medium leeks
  • 1.5 pounds tomatoes or more
  • 2 medium onions
  • 1 pound potatoes
  • garlic to taste
  • salt, pepper, herbs and spices to taste

  • 1.5 pounds tomatoes or more
  • 2 medium onions
  • 1 pound potatoes
  • garlic to taste
  • salt, pepper, herbs and spices to taste
Instructions
  1. Do not peel any of the vegetables, but wash and scrub them gently.
  2. Cut them coarsely and place into a non-toxic cooking pot (i.e.: enamelled cast iron).
  3. Add filtered water to cover vegetables.
  4. Bring to a boil and simmer for 2 hours.
  5. Pass through a food mill in small portions.
Recipe Notes

To add variety and taste to your soup, experiment with adding different herbs each time.
