Grilled Basil Garlic Chicken Breasts

Ingredients
  • 4 chicken breasts skin on
  • 3 tbsp garlic finely minced
  • 1/2 cup basil fresh and chopped
  • 1/4 cup extra virgin olive oil
  • Sea salt and pepper (pepper only if tolerated)

Ingredients
  • 4 chicken breasts skin on
  • 3 tbsp garlic finely minced
  • 1/2 cup basil fresh and chopped
  • 1/4 cup extra virgin olive oil
  • Sea salt and pepper (pepper only if tolerated)
Instructions
  1. In a small bowl, mix the garlic, basil and oil. Add more oil if needed.
  2. Smear the mixture on both sides of the chicken breasts being careful to leave the skin intact. Sprinkle both sides with small amount of salt and pepper. (Can let marinade for up to 6 hours if desired. Letting the chicken marinate for some time will add to the flavor and tenderness of the chicken)
  3. Over medium fire, place chicken breasts on grill (skin side down to crisp skin) and cook for about 8-10 minutes. Watch temperature to make sure the chicken doesn't burn.
  4. Flip the chicken breasts and cook for another 8-10 minutes with cover closed for part of the time to have grill function as an oven (if your chicken breasts are not thick, cover should be left open)
  5. Remove the chicken from heat and let rest for 10 minutes before serving. Enjoy!
  6. Note: If you are not sure when the chicken is cooked, remove one breast from heat and cut to ensure the flesh is no longer pink.
